Dr. Giampapa, who actually healed himself from allergies, told Carol that one of the biggest problems is that, as people age, they aren’t able to digest food as well. Therefore, when they eat, big chunks of food go into the bloodstream and trigger allergies.
He was having problems with food, including the ultra-healthy varieties like kale and spinach. The first thing he did was an Alcat (Antigen Leukocyte Antibody) Test to look for hidden sensitivities.
He explained the difference between an allergy and a sensitivity: Food allergy is an IgE immune system response that is typically characterized by hives, shortness of breath, upset stomach and in some cases anaphylaxis. It can lead to death.
Food intolerance (sensitivity), on the other hand, is much more common than food allergies and is characterized by digestive disorders, migraines, obesity, chronic fatigue, aching joints, skin disorders and behavioral issues. It leads to obesity and aging. While an allergy can be a very quick response, a sensitivity or intolerance usually takes a long time.
The Alcat Test explores the blood and, depending upon the level of intolerance, people will be told to avoid the offending food completely for a specific amount of time to eliminate the rejection factor. Then, they re-introduce the food very slowly, one-at-a-time, and usually with a digestive enzyme. To recap, Carol said there are 3 steps:
1. Cleanse the body by eliminating offenders for however long
2. Gradually re-introduce offending foods on a one-to-one basis
3. Use digestive enzymes
